Ingredients

Scale
  • 1 lb chicken breast or thighs
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 potatoes, diced
  • 1 cup peas
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk or dairy-free alternative
  • 2 tbsp flour or cornstarch
  • 2 tbsp olive oil or butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 1 tbsp fresh parsley, chopped
  • 1 bay leaf

Instructions

  1. Cook the Chicken: Heat olive oil in a large pot over medium heat. Add chicken and cook until golden brown on both sides. Remove and set aside.
  2. Sauté Aromatics: In the same pot, add more olive oil if needed. Sauté onions, carrots, and celery for 5 minutes until softened. Add garlic and cook for another minute.
  3. Add Broth & Simmer: Pour in chicken broth, scraping up any browned bits. Add potatoes, thyme, parsley, and bay leaf. Bring to a gentle boil.
  4. Shred the Chicken: While the soup simmers, shred cooked chicken into bite-sized pieces and return to the pot.
  5. Thicken the Soup: In a small bowl, whisk together milk and flour or cornstarch. Slowly stir into soup, mixing constantly to prevent lumps.
  6. Final Touches: Stir in peas and cook for an additional 5 minutes. Season with salt and pepper.
  7. Serve & Enjoy: Remove the bay leaf, ladle into bowls, garnish with parsley, and serve warm.
