- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 large egg yolk
- 1 tsp vanilla extract
- ¼ tsp salt
- ½ cup jam of choice (strawberry, raspberry, apricot, or cherry)

- Prepare the Dough:

- Cream butter and sugar in a large bowl until light and fluffy.
- Add the egg yolk and vanilla extract, mixing until combined.
- Gradually sift in flour and salt, stirring to form a dough. Avoid overmixing.
- Wrap dough in plastic and refrigerate for 30 minutes.
- Preheat the Oven:
- Preheat to 350°F (175°C). Line two baking sheets with parchment paper.
- Roll and Shape:
- Roll chilled dough on a floured surface to 1/8-inch thickness.
- Cut heart shapes with a cookie cutter; use a smaller cutter to make cutouts in half of the hearts.
- Bake:
- Bake cookies for 8–10 minutes, until edges turn lightly golden.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Assemble:
- Spread jam onto the whole cookies.
- Top with cutout cookies, pressing gently to sandwich.
- Optional: Dust tops with powdered sugar before assembly.
- Set and Serve:
- Let jam set before serving. Store leftovers in an airtight container.

- Storage: Keep in an airtight container for up to 3 days at room temperature or a week in the refrigerator.
- Freezing: Freeze unassembled cookies for up to 3 months; thaw before assembling.
