    • 1 ½ tsp salt

    • 2 tbsp fresh parsley (chopped)
    • 1 tbsp fresh thyme (chopped)

    • 3 tbsp olive oil
  • For Finishing:
    • 2 tbsp unsalted butter (melted, for brushing)

Instructions

Step 1: Prepare the Dough

  1. Combine warm water, a pinch of sugar, and yeast in a small bowl. Let sit for 5–10 minutes until frothy.
  2. In a large bowl, whisk together flour, sugar, and salt.
  3. Mix warmed milk and melted butter, then combine with dry ingredients.
  4. Add the yeast mixture and mix until a sticky dough forms.
  5. Knead the dough on a floured surface for 8–10 minutes (or 5–7 minutes in a stand mixer with a dough hook) until smooth and elastic.
  6. Place in a greased bowl, cover with a towel, and let rise for 1–1.5 hours until doubled in size.

Step 2: Make the Herb & Garlic Filling

  1. Sauté garlic in olive oil over low heat for 1 minute until fragrant.
  2. Stir in parsley, thyme, and rosemary. Let cool slightly.

Step 3: Assemble the Rolls

  1. Punch down the risen dough and roll into a 12×18-inch rectangle on a floured surface.
  2. Spread the herb and garlic mixture evenly over the dough, leaving a small border.
  3. Roll the dough tightly into a log and pinch the seam to seal.
  4. Slice the log into 12 even pieces and place them spiral-side up in a greased or parchment-lined baking dish.

Step 4: Second Rise and Bake

  1. Cover rolls with a towel or plastic wrap and let rise for 30–40 minutes until puffy.
  2. Preheat oven to 375°F (190°C).
  3. Bake rolls for 20–25 minutes until golden brown.
  4. Brush warm rolls with melted butter for a glossy finish.
