- 2 ¼ tsp (1 packet) active dry yeast

- ¾ cup whole milk (warmed)

- 1 ½ tsp salt
- For the Filling:
- 3 garlic cloves (finely chopped)
- 2 tbsp fresh parsley (chopped)
- 1 tbsp fresh thyme (chopped)
- 1 tbsp fresh rosemary (chopped)
- 3 tbsp olive oil
- For Finishing:
- 2 tbsp unsalted butter (melted, for brushing)
Instructions
Step 1: Prepare the Dough
- Combine warm water, a pinch of sugar, and yeast in a small bowl. Let sit for 5–10 minutes until frothy.
- In a large bowl, whisk together flour, sugar, and salt.
- Mix warmed milk and melted butter, then combine with dry ingredients.
- Add the yeast mixture and mix until a sticky dough forms.
- Knead the dough on a floured surface for 8–10 minutes (or 5–7 minutes in a stand mixer with a dough hook) until smooth and elastic.
- Place in a greased bowl, cover with a towel, and let rise for 1–1.5 hours until doubled in size.
Step 2: Make the Herb & Garlic Filling
- Sauté garlic in olive oil over low heat for 1 minute until fragrant.
- Stir in parsley, thyme, and rosemary. Let cool slightly.
Step 3: Assemble the Rolls
- Punch down the risen dough and roll into a 12×18-inch rectangle on a floured surface.
- Spread the herb and garlic mixture evenly over the dough, leaving a small border.
- Roll the dough tightly into a log and pinch the seam to seal.
- Slice the log into 12 even pieces and place them spiral-side up in a greased or parchment-lined baking dish.
Step 4: Second Rise and Bake
- Cover rolls with a towel or plastic wrap and let rise for 30–40 minutes until puffy.
- Preheat oven to 375°F (190°C).
- Bake rolls for 20–25 minutes until golden brown.
- Brush warm rolls with melted butter for a glossy finish.
