Hobo Casserole is an easy, budget-friendly dish made with ground beef, creamy soup, and potatoes or biscuits. A hearty, one-dish meal perfect for busy weeknights!

- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (10.5 oz) condensed cream of mushroom soup
- ½ cup milk
- 3–4 medium potatoes, thinly sliced (or 1 can refrigerated biscuits)
- 1 cup shredded cheddar cheese
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp butter, melted
- Optional: ½ cup chopped bell peppers, ½ cup sliced mushrooms, 1 tbsp Worcestershire sauce
Instructions
- Preheat the Oven – Set oven to 375°F (190°C).
- Cook the Beef – In a skillet over medium heat, brown the ground beef with chopped onions and minced garlic. Drain excess grease.
- Prepare the Sauce – In a bowl, mix condensed cream of mushroom soup with milk until well combined.
- Layer the Ingredients – Grease a baking dish and layer sliced potatoes (or biscuits). Spread cooked ground beef mixture on top.
- Add the Sauce – Pour the creamy soup mixture over the beef and potatoes for even coverage.
- Bake – Cover with foil and bake for 45 minutes.
- Add Cheese – Remove foil, sprinkle shredded cheddar cheese, and bake uncovered for another 10-15 minutes until bubbly.
- Serve – Let casserole rest for a few minutes before serving.
