Homemade Zuppa Toscana Soup

  • Total Time: 40 minutes
  • Yield: 6 servings 1x

Description

Make a comforting bowl of homemade Zuppa Toscana soup with Italian sausage, tender potatoes, and fresh kale in a creamy, flavorful broth. Easy, customizable, and better than restaurant versions!

Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 medium russet potatoes, sliced
  • 2 cups kale or spinach, chopped
  • 1 cup heavy cream
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1/4 cup Parmesan cheese (optional, for garnish)

Instructions

  1. Cook the Sausage: In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon. Remove excess grease if necessary.
  2. Sauté Aromatics: Add diced onion to the pot and cook until softened. Stir in minced garlic and cook for another minute until fragrant.
  3. Add Broth and Potatoes: Pour in the chicken broth and bring it to a gentle boil. Add sliced potatoes and let them simmer until tender, about 15 minutes.
  4. Incorporate Greens: Stir in chopped kale (or spinach) and allow it to wilt in the hot broth.
  5. Add Cream and Seasonings: Reduce heat to low and pour in the heavy cream. Stir well and season with salt, pepper, and red pepper flakes.
  6. Serve: Ladle the soup into bowls, garnish with grated Parmesan if desired, and enjoy!

Notes

  • Dairy-Free Version: Substitute heavy cream with coconut milk or a dairy-free creamer.
  • Low-Carb Option: Replace potatoes with cauliflower for a keto-friendly twist.
  • Vegetarian Alternative: Use plant-based sausage and vegetable broth instead of chicken broth.
  • Spice Level Control: Adjust the amount of red pepper flakes or use mild sausage for a milder taste.
