- 1 pork tenderloin (approx. 1–1.5 lbs)
- 2 tbsp olive oil, divided
- 1/4 cup honey
- 3 garlic cloves, minced
- 3 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp apple cider vinegar
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
Instructions
- Prepare the Pork Tenderloin
- Trim the silver skin from the tenderloin and pat dry with paper towels.
- Season with salt, black pepper, and paprika.
- Sear the Pork
- Heat 1 tbsp olive oil in a skillet over medium-high heat.
- Sear the tenderloin on all sides until golden brown (2–3 minutes per side). Remove and set aside.
- Make the Honey Garlic Sauce
- Lower the heat to medium and add 1 tbsp olive oil.
- Sauté minced garlic for 30 seconds until fragrant.
- Stir in honey, soy sauce, and apple cider vinegar. Let the sauce simmer for 1–2 minutes.
- Cook the Pork
- Return the tenderloin to the skillet, spooning sauce over it.
- Reduce heat to low, cover, and cook for 8–12 minutes, turning occasionally.
- Use a meat thermometer to ensure the internal temperature reaches 145°F (63°C).
- Rest and Slice
- Remove the tenderloin from the skillet and let it rest for 5 minutes.
- Slice into medallions and drizzle with remaining sauce.
- Serve
