Instructions
- Prepare the ingredients – Dice the bacon, chop onions, carrots, and garlic, and shred the cabbage. Peel and cube the potatoes.
- Cook the bacon – In a large pot over medium heat, cook the bacon until crispy. Remove and set aside, leaving some rendered fat.
- Sauté the vegetables – Add butter to the pot and sauté onions, carrots, and garlic until softened.
- Make a roux – Stir in flour and cook for a minute to create a light roux for thickening.
- Simmer the soup – Gradually add broth, stirring constantly. Add potatoes, cabbage, bay leaf, and thyme. Bring to a gentle simmer and cook until potatoes are tender.
- Blend (optional) – For a creamy texture, blend a portion of the soup before adding the bacon back in.
- Finish the soup – Stir in cooked bacon and heavy cream if using. Season with salt and black pepper.
- Serve – Ladle into bowls and garnish with fresh herbs if desired.
