- 4 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 egg yolk
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/4 cup brown sugar
- 1/2 tsp ground cinnamon
- 2 tbsp milk
- 1/4 cup cinnamon sugar (for topping)
Instructions
- Preheat & Prep: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Make Cheesecake Filling: Beat cream cheese, granulated sugar, vanilla extract, and egg yolk until smooth. Chill while preparing the dough.
- Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, and salt.
- Cream Butter & Sugar: In a separate bowl, beat butter and brown sugar until light and fluffy. Add vanilla extract and milk, mixing until combined.
- Combine: Gradually add dry ingredients to the butter mixture, stirring until a soft dough forms.
- Shape & Fill: Roll dough into balls, flatten slightly, and create a small indentation in the center. Spoon in a small amount of cheesecake filling.
- Add Cinnamon Sugar: Sprinkle cinnamon sugar over cookies for a churro-like finish.
- Bake: Bake for 10-12 minutes or until golden brown around the edges.
- Cool & Serve: Let cool on a wire rack before serving.
