- ½ cup butter, softened
- 6 cloves garlic, minced
- 1 lemon, halved

- 1 tbsp olive oil
- ½ cup chicken broth
- Optional: 2 carrots, 2 potatoes, 1 onion, chopped
Instructions
- Prepare the Chicken – Preheat oven to 425°F (220°C). Pat chicken dry with paper towels and remove giblets.
- Make the Garlic Butter – Mix softened butter with garlic, herbs, salt, black pepper, and paprika.
- Season the Chicken – Gently loosen the skin and rub half the garlic butter under it. Rub the rest over the exterior.
- Stuff the Cavity – Insert halved lemon, whole garlic cloves, and additional herbs into the cavity.
- Truss the Chicken – Tie the legs together with kitchen twine.
- Prepare the Roasting Pan – Place a wire rack in a roasting pan, optionally adding chopped vegetables.
- Roast the Chicken – Position chicken breast-side up, drizzle with olive oil, and add chicken broth to the pan. Roast for 45 minutes.
- Baste and Finish Cooking – Baste with pan juices, then roast for another 20-30 minutes, until the internal temperature reaches 165°F (75°C).
- Rest and Serve – Let the chicken rest for 10-15 minutes before carving. Serve with roasted vegetables and favorite sides.
