  • 2 cups spinach or kale, chopped

Instructions

  1. Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3 minutes. Stir in minced garlic and cook for another 30 seconds until fragrant.
  2. Brown the Turkey: Add the ground turkey, breaking it up with a spoon. Cook until browned and no longer pink, about 5-7 minutes. Season with salt, black pepper, and red pepper flakes if using.
  3. Add the Vegetables: Stir in the carrots, celery, bell peppers, and zucchini. Cook for about 5 minutes to slightly soften.
  4. Incorporate Tomatoes and Broth: Pour in diced tomatoes, tomato paste, and broth. Add Italian seasoning and bay leaves. Stir well to combine.
  5. Simmer: Bring to a gentle boil, then reduce heat and let simmer for 15-20 minutes, stirring occasionally.
