- 1 (15 oz) can cannellini or kidney beans, drained and rinsed
- 2 cups spinach or kale, chopped
- Parmesan cheese, for garnish
- Fresh basil or parsley, for garnish
Instructions
- Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3 minutes. Stir in minced garlic and cook for another 30 seconds until fragrant.
- Brown the Turkey: Add the ground turkey, breaking it up with a spoon. Cook until browned and no longer pink, about 5-7 minutes. Season with salt, black pepper, and red pepper flakes if using.
- Add the Vegetables: Stir in the carrots, celery, bell peppers, and zucchini. Cook for about 5 minutes to slightly soften.
- Incorporate Tomatoes and Broth: Pour in diced tomatoes, tomato paste, and broth. Add Italian seasoning and bay leaves. Stir well to combine.
- Simmer: Bring to a gentle boil, then reduce heat and let simmer for 15-20 minutes, stirring occasionally.
- Add Beans and Greens: Stir in beans and chopped spinach or kale. Cook for another 5 minutes until the greens wilt and beans are heated through.
- Final Seasoning and Garnish: Adjust seasoning as needed. Remove bay leaves. Serve hot, garnished with Parmesan cheese and fresh basil or parsley.
