Ingredients
Scale
- 4 large eggs
- 1 cup Greek yogurt
- 1 garlic clove, grated or minced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp red pepper flakes
- 1/2 tsp paprika
- 1 tsp lemon juice
- Salt and black pepper, to taste
- Fresh herbs (such as dill or parsley), for garnish
- Crusty bread (optional, for serving)
Instructions
- Prepare the eggs: Bring a pot of water to a rolling boil. Carefully lower the eggs into the water and cook for about 6-7 minutes for jammy yolks. Transfer the eggs to an ice bath and let them sit for a few minutes before peeling.
- Make the garlic yogurt: In a bowl, mix Greek yogurt with grated or minced garlic, a splash of lemon juice, salt, and black pepper. Stir until smooth and well combined.
- Prepare the chili butter: In a small pan, melt butter with a drizzle of olive oil over medium heat. Add red pepper flakes and paprika, stirring until fragrant and slightly foamy. Remove from heat.
- Assemble the dish: Spread the garlic yogurt onto a plate or shallow bowl. Halve the jammy eggs and arrange them over the yogurt.
- Drizzle the chili butter: Pour the warm chili butter over the eggs, letting it seep into the yogurt for extra flavor.
- Garnish and serve: Sprinkle fresh herbs over the top and serve with crusty bread for dipping.
Notes
- Herbed yogurt – Mix in finely chopped dill, parsley, or mint for added freshness.
- Spiced butter – Swap paprika and red pepper flakes for Aleppo pepper, sumac, or cumin for a different spice profile.
- Vegan option – Replace eggs with roasted chickpeas or tofu and use plant-based yogurt and butter alternatives.
- Extra toppings – Add toasted pine nuts, crumbled feta, or a drizzle of honey for extra layers of flavor.
