Instructions

  1. Prepare the Leeks: Trim off the dark green tops, slice lengthwise, and rinse thoroughly under cold water to remove dirt.
  2. Cook the Leeks: Bring a large pot of salted water to a gentle boil. Add the leeks and cook for 8-10 minutes until tender but intact.
  3. Cool and Drain: Transfer the leeks to an ice bath for a few minutes, then drain on a clean kitchen towel.
  4. Prepare the Vinaigrette: In a small bowl, whisk together Dijon mustard, white wine vinegar, minced shallot, salt, and black pepper. Slowly drizzle in olive oil while whisking until emulsified. Adjust seasoning to taste.
