  • 10 Medjool dates (pitted)
  • 1/2 cup desiccated coconut (plus extra for coating)
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil (melted)
  • Pinch of salt

Instructions

  1. Prepare the ingredients – Soak cashews in warm water for about 10 minutes, then drain.
  2. Blend the base – In a food processor, combine soaked cashews and Medjool dates. Pulse until a sticky, coarse dough forms.
  3. Add flavor – Add desiccated coconut, lemon zest, lemon juice, vanilla extract, coconut oil, and salt. Blend until smooth and well combined.
  4. Check consistency – If too dry, add more lemon juice or coconut oil; if too wet, add extra desiccated coconut.
  5. Form into balls – Scoop out portions and roll into bite-sized balls.
  6. Coat the bliss balls – Roll each ball in additional desiccated coconut.
  7. Chill and set – Place on a parchment-lined tray and refrigerate for at least 30 minutes.
  8. Enjoy – Serve immediately or store for later.
