- 10 Medjool dates (pitted)
- 1/2 cup desiccated coconut (plus extra for coating)
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tbsp coconut oil (melted)
- Pinch of salt
Instructions
- Prepare the ingredients – Soak cashews in warm water for about 10 minutes, then drain.
- Blend the base – In a food processor, combine soaked cashews and Medjool dates. Pulse until a sticky, coarse dough forms.
- Add flavor – Add desiccated coconut, lemon zest, lemon juice, vanilla extract, coconut oil, and salt. Blend until smooth and well combined.
- Check consistency – If too dry, add more lemon juice or coconut oil; if too wet, add extra desiccated coconut.
- Form into balls – Scoop out portions and roll into bite-sized balls.
- Coat the bliss balls – Roll each ball in additional desiccated coconut.
- Chill and set – Place on a parchment-lined tray and refrigerate for at least 30 minutes.
- Enjoy – Serve immediately or store for later.
