Description

  • 1 tsp vanilla extract
  • ½ cup (120ml) whole milk
  • 1 cup (150g) fresh or frozen blueberries
  • 1 tbsp flour (for tossing blueberries)
  • ¾ cup (90g) powdered sugar (for glaze)
  • 23 tbsp fresh lemon juice (for glaze)

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar: Beat butter and sugar in a large bowl until light and fluffy.
  4. Add Eggs and Flavorings: Mix in eggs one at a time. Stir in lemon zest, lemon juice, and vanilla extract.
  5. Combine Dry and Wet: Alternate adding dry ingredients and milk to the butter mixture, starting and ending with dry ingredients. Mix until just combined.
  6. Fold in Blueberries: Toss blueberries with 1 tbsp flour, then gently fold into the batter.
  7. Bake: Pour batter into the prepared pan and bake for 55-65 minutes. Test doneness with a toothpick at 50 minutes.
  8. Cool and Glaze: Cool cake in the pan for 10 minutes, then transfer to a wire rack. Mix powdered sugar and lemon juice to make a glaze and drizzle over the cooled cake.
