- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup Greek yogurt or sour cream
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 1 1/2 tbsp poppy seeds
- 2–3 tbsp milk (if needed for consistency)
Instructions
- Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease the wells.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and poppy seeds. Set aside.
- In a large bowl, beat the butter and sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the lemon zest, lemon juice, and vanilla extract.
- Alternate adding the dry mixture and the yogurt (or sour cream) into the wet mixture, stirring gently until just combined. Do not overmix.
- If the batter is too thick, add milk gradually until desired consistency is reached.
- Spoon the batter evenly into the prepared muffin cups, filling each about three-quarters full.
- Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
- Let the muffins rest in the tin for 5 minutes before transferring them to a wire rack to cool completely.
