- 4 large russet potatoes
- 1 lb shrimp (medium or large, peeled and deveined)
- 4 tbsp butter (melted)
- 1/2 cup heavy cream
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese

- 4 oz cream cheese (softened)
- 2 cloves garlic (minced)
- 4 slices bacon (cooked and crumbled)
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 2 green onions (chopped)
- 1 tbsp fresh parsley (chopped)
Instructions
- Preheat and Prepare Potatoes: Preheat oven to 400°F (200°C). Wash and scrub potatoes, poke holes with a fork, and bake for 1 hour until tender. Let cool slightly, then peel and dice into cubes.
- Cook Bacon: While potatoes bake, cook bacon in a skillet over medium heat until crispy. Place on a paper towel-lined plate, then crumble and set aside.
- Prepare Shrimp: In the same skillet, heat olive oil over medium heat. Sauté shrimp with garlic, paprika, onion powder, salt, and black pepper for 2-3 minutes per side until pink and opaque. Remove from heat.
- Make the Creamy Mixture: In a large bowl, mix melted butter, heavy cream, sour cream, and cream cheese until smooth. Stir in cheddar and mozzarella cheese.
- Assemble Casserole: Grease a baking dish and spread diced potatoes evenly. Pour creamy mixture over potatoes and stir to coat. Add cooked shrimp and half the crumbled bacon, mixing well.
- Bake: Sprinkle extra cheddar cheese on top. Bake at 375°F (190°C) for 20 minutes or until cheese is melted and bubbly.
- Garnish and Serve: Remove from oven and top with remaining bacon, chopped green onions, and parsley. Let cool slightly before serving.
