- 1/2 cup grated parmesan cheese
- 1/2 cup vegetable broth
- Salt and pepper to taste
- 1 tsp fresh thyme
- 1/2 tsp red pepper flakes (optional)
- Fresh parsley for garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta until al dente according to package instructions. Reserve a cup of pasta water before draining.
- Sauté the Mushrooms: In a large pan, heat olive oil and butter over medium heat. Add chopped onion and cook until translucent. Stir in minced garlic and cook for another minute.
- Add Mushrooms: Toss in the mixed mushrooms and cook until they release their moisture and become golden brown.
- Make the Sauce: Pour in vegetable broth and let it simmer for a few minutes. Lower the heat and stir in heavy cream, allowing it to thicken slightly.
- Incorporate Cheese and Seasonings: Add grated parmesan cheese, fresh thyme, salt, pepper, and red pepper flakes if using. Stir well until the cheese melts and the sauce is creamy.
- Combine Pasta and Sauce: Add the drained pasta to the pan and toss everything together. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
- Garnish and Serve: Sprinkle with fresh parsley and additional parmesan before serving. Enjoy immediately!
