Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta until al dente according to package instructions. Reserve a cup of pasta water before draining.
  2. Sauté the Mushrooms: In a large pan, heat olive oil and butter over medium heat. Add chopped onion and cook until translucent. Stir in minced garlic and cook for another minute.
  3. Add Mushrooms: Toss in the mixed mushrooms and cook until they release their moisture and become golden brown.
  4. Make the Sauce: Pour in vegetable broth and let it simmer for a few minutes. Lower the heat and stir in heavy cream, allowing it to thicken slightly.
  5. Incorporate Cheese and Seasonings: Add grated parmesan cheese, fresh thyme, salt, pepper, and red pepper flakes if using. Stir well until the cheese melts and the sauce is creamy.
  6. Combine Pasta and Sauce: Add the drained pasta to the pan and toss everything together. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
  7. Garnish and Serve: Sprinkle with fresh parsley and additional parmesan before serving. Enjoy immediately!
