  • 4 salmon fillets
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken or vegetable broth
  • 3/4 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 tsp red pepper flakes
  • 1 tsp Italian seasoning
  • 1/4 cup fresh basil, chopped
  • Salt and pepper, to taste

Instructions

  1. Prepare the Salmon: Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.
  2. Sear the Salmon: Heat olive oil in a large skillet over medium-high heat. Add the salmon fillets skin-side down and cook for about 4-5 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  3. Make the Sauce: In the same skillet, add more olive oil if needed and sauté minced garlic until fragrant. Stir in the sun-dried tomatoes and red pepper flakes, cooking for about a minute.
  4. Add Liquids: Pour in the broth and let it simmer for a couple of minutes, allowing the flavors to meld.
  5. Create the Creamy Base: Reduce the heat to low and stir in the heavy cream and grated parmesan cheese. Mix well until the sauce thickens slightly.
  6. Combine Everything: Return the salmon fillets to the skillet and spoon the creamy sauce over them. Let them simmer for another 2-3 minutes.
  7. Garnish and Serve: Sprinkle fresh basil on top before serving. Enjoy with pasta, rice, or crusty bread.
