Perfect for both weeknight dinners and special occasions, this dish features a luscious sauce made with heavy cream, parmesan, and aromatic herbs, complementing the buttery salmon beautifully.
Ingredients
Scale
- 4 salmon fillets
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped
- 1/2 cup chicken or vegetable broth
- 3/4 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1/2 tsp red pepper flakes
- 1 tsp Italian seasoning
- 1/4 cup fresh basil, chopped
- Salt and pepper, to taste
Instructions
- Prepare the Salmon: Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.
- Sear the Salmon: Heat olive oil in a large skillet over medium-high heat. Add the salmon fillets skin-side down and cook for about 4-5 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
- Make the Sauce: In the same skillet, add more olive oil if needed and sauté minced garlic until fragrant. Stir in the sun-dried tomatoes and red pepper flakes, cooking for about a minute.
- Add Liquids: Pour in the broth and let it simmer for a couple of minutes, allowing the flavors to meld.
- Create the Creamy Base: Reduce the heat to low and stir in the heavy cream and grated parmesan cheese. Mix well until the sauce thickens slightly.
- Combine Everything: Return the salmon fillets to the skillet and spoon the creamy sauce over them. Let them simmer for another 2-3 minutes.
- Garnish and Serve: Sprinkle fresh basil on top before serving. Enjoy with pasta, rice, or crusty bread.
Notes
- Dairy-Free: Swap heavy cream for coconut milk and use nutritional yeast instead of parmesan.
- Spicy Kick: Increase the red pepper flakes or add a dash of cayenne pepper.
- Lemon Infusion: Squeeze fresh lemon juice over the salmon for added brightness.
- Keto-Friendly: Serve over zoodles or cauliflower rice instead of pasta.
- Extra Veggies: Add spinach or mushrooms to the sauce for more texture and nutrients.
