  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, chopped
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Prepare Ingredients: Chop the tomatoes, bell pepper, red onion, garlic, and olives. Crumble the feta and chop the parsley.
  2. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add red onion and bell pepper, sauté for 3-4 minutes until softened.
  3. Add Garlic & Tomatoes: Stir in garlic and cherry tomatoes, cooking for 2 minutes until tomatoes soften.
  4. Incorporate Spinach & Olives: Add spinach and olives, stirring until spinach wilts.
  5. Scramble Eggs: In a bowl, whisk eggs with salt, black pepper, and oregano. Pour into skillet, stirring gently.
  6. Cook Until Set: Stir occasionally, cooking for 3-5 minutes until eggs are fully set but soft.
  7. Finish with Feta & Garnish: Sprinkle feta on top, cooking for another minute. Remove from heat, garnish with parsley and red pepper flakes.
