Description

Ingredients

  • 4 slices of hearty bread (such as sourdough or Irish soda bread)
  • 1 ½ cups Irish cheddar cheese, grated
  • 2 tbsp butter, softened
  • 1 tsp Dijon or whole grain mustard
  • ½ tsp Worcestershire sauce
  • 2 tbsp scallions, finely chopped (optional)
  • ¼ tsp black pepper

 

  • ¼ tsp garlic powder (optional)

Instructions

  • Prepare the Bread – Spread a thin layer of butter on one side of each bread slice.
  • Flavor the Cheese – In a bowl, mix grated Irish cheddar, Worcestershire sauce, mustard, chopped scallions, black pepper, and garlic powder.
  • Assemble the Toasties – Spread the cheese mixture evenly on the unbuttered side of one slice of bread. Top with another slice, butter-side facing outward.
  • Cook to Perfection – Heat a skillet over medium-low heat. Place the sandwich butter-side down, cooking for 3-4 minutes until golden. Flip and cook another 3-4 minutes until the cheese is fully melted.

 

  • Serve and Enjoy – Let rest for a minute, slice diagonally, and serve hot with soup or salad.

Notes

  • Storage: Best enjoyed fresh but can be stored in an airtight container in the fridge for up to 2 days.
  • Reheating: Warm in a skillet over low heat or bake at 350°F (175°C) until crispy. Avoid microwaving.
