Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. Blend the Wet Ingredients: In a blender, combine spinach leaves, eggs, vanilla extract, honey (or maple syrup), milk, and melted coconut oil (or butter). Blend until smooth and vibrant green.
  3. Mix the Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Combine Wet and Dry Mixtures: Pour the blended wet ingredients into the dry ingredients and mix until just combined. Avoid overmixing to keep the muffins fluffy.
  5. Add a Natural Sweetener: Mash a ripe banana or add applesauce to enhance moisture and natural sweetness.
  6. Fill the Muffin Tin: Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
