Ingredients
Scale
- 3 ¾ cups (450g) all-purpose flour
- 2 ¼ teaspoons (1 packet) instant yeast
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 1 ¼ cups warm water (110°F/45°C)
- 2 tablespoons unsalted butter, melted
- 8–10 mozzarella cheese sticks (cut into 2–3 inch pieces)
- ½ cup baking soda
- 1 large egg (for egg wash)
- Coarse salt (for topping)
Instructions
Step 1: Prepare the Dough
- In a large bowl, mix flour, yeast, sugar, and salt. Gradually add warm water and melted butter. Stir until a soft dough forms.
- Knead the dough on a floured surface for 5–7 minutes, until smooth and elastic.
- Place dough in a greased bowl, cover with a damp towel, and let rise for 1 hour or until doubled in size.
Step 2: Prepare the Filling
- Cut mozzarella sticks into smaller pieces (2–3 inches long). Set aside.
Step 3: Shape and Fill the Pretzels
- Punch down the risen dough and divide into 8–10 equal pieces.
- Roll each piece into a 12–14 inch rope and flatten slightly. Place a mozzarella piece in the center, fold the dough over, and seal tightly.
- Shape the stuffed dough into pretzels by forming a “U,” crossing the ends, and twisting before pressing them onto the bottom curve.
Step 4: Baking Soda Bath
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Bring 8 cups of water to a boil in a large pot. Stir in baking soda.
- Submerge each pretzel in the boiling water for 30 seconds. Remove with a slotted spatula and place on the baking sheet.
Step 5: Add Toppings and Bake
- Brush each pretzel with beaten egg. Sprinkle with coarse salt or desired toppings.
- Bake for 12–15 minutes, or until golden brown and the cheese is melted.
Step 6: Serve
- Allow pretzels to cool slightly before serving. Pair with marinara, ranch, or honey mustard for dipping.
Notes
- Variations: Try different cheeses (cheddar, gouda, pepper jack), or add pepperoni for a pizza-inspired version. For dessert, coat with cinnamon sugar and stuff with cream cheese.
- Storage: Store leftovers in an airtight container at room temperature for 2 days or in the fridge for up to 5 days. Freeze for up to 3 months.
- Reheating: Warm in a 350°F oven for 5–7 minutes. Thaw frozen pretzels before reheating.
