Description

  • 2 tablespoons unsalted butter, melted
  • 810 mozzarella cheese sticks (cut into 23 inch pieces)
  • ½ cup baking soda
  • 1 large egg (for egg wash)
  • Coarse salt (for topping)

Instructions

Step 1: Prepare the Dough

  1. In a large bowl, mix flour, yeast, sugar, and salt. Gradually add warm water and melted butter. Stir until a soft dough forms.
  2. Knead the dough on a floured surface for 5–7 minutes, until smooth and elastic.
  3. Place dough in a greased bowl, cover with a damp towel, and let rise for 1 hour or until doubled in size.

Step 2: Prepare the Filling

  1. Cut mozzarella sticks into smaller pieces (2–3 inches long). Set aside.

Step 3: Shape and Fill the Pretzels

  1. Punch down the risen dough and divide into 8–10 equal pieces.
  2. Roll each piece into a 12–14 inch rope and flatten slightly. Place a mozzarella piece in the center, fold the dough over, and seal tightly.
  3. Shape the stuffed dough into pretzels by forming a “U,” crossing the ends, and twisting before pressing them onto the bottom curve.

Step 4: Baking Soda Bath

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Bring 8 cups of water to a boil in a large pot. Stir in baking soda.
  3. Submerge each pretzel in the boiling water for 30 seconds. Remove with a slotted spatula and place on the baking sheet.

Step 5: Add Toppings and Bake

  1. Brush each pretzel with beaten egg. Sprinkle with coarse salt or desired toppings.
  2. Bake for 12–15 minutes, or until golden brown and the cheese is melted.

Step 6: Serve

  • Allow pretzels to cool slightly before serving. Pair with marinara, ranch, or honey mustard for dipping.
