  • 2 tbsp olive oil
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, grated
  • Salt, to taste
  • Black pepper, to taste
  • ½ tsp red pepper flakes (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pappardelle according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.
  2. Sauté the Mushrooms: In a large skillet over medium heat, warm the olive oil and butter. Add the mushrooms and cook until they release their moisture and turn golden brown, about 5-7 minutes.
  3. Add the Garlic: Stir in the minced garlic and cook for another minute until fragrant, ensuring it doesn’t burn.
  4. Incorporate the Lemon: Add the lemon zest and juice, stirring to combine. This enhances the dish with a fresh, citrusy brightness.
  5. Create the Sauce: Pour in the heavy cream and stir well. Let it simmer for a couple of minutes until slightly thickened.
  6. Mix in the Pasta: Add the cooked pappardelle to the skillet, tossing it gently to coat with the sauce. If the sauce is too thick, add a bit of reserved pasta water to reach the desired consistency.
  7. Season and Finish: Stir in grated Parmesan cheese, salt, black pepper, and red pepper flakes if using. Toss everything together until well combined.
  8. Garnish and Serve: Sprinkle with fresh parsley and additional Parmesan before serving hot.
