- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 1/2 tsp salt

- 1/4 tsp red pepper flakes (optional)
- 1/4 cup white wine (optional)
- 1/2 cup vegetable or chicken broth
- 1/8 tsp nutmeg
- Fresh parsley for garnish
Instructions
Step 1: Cook the Ravioli
- Bring a large pot of salted water to a boil.
- Add ravioli and cook according to package instructions or until they float.
- Drain and set aside.
Step 2: Sauté the Mushrooms and Aromatics
- Heat olive oil and butter in a large skillet over medium heat.
- Add onion and sauté until translucent.
- Stir in garlic and cook until fragrant.
- Add mushrooms and cook until golden brown and moisture evaporates.
- If using, deglaze the pan with white wine and let it reduce.
Step 3: Prepare the Spinach Sauce
- Add spinach and stir until wilted.

- Lower heat and stir in heavy cream, Parmesan, nutmeg, salt, and pepper.
- Simmer until the sauce thickens slightly.
Step 4: Combine and Serve
- Gently fold ravioli into the sauce until well coated.
- Adjust seasoning if needed.
- Garnish with parsley and additional Parmesan.
