Instructions

  1. Preheat & Prepare – Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it with coconut oil.
  2. Mash the Bananas – In a large mixing bowl, mash the ripe bananas until smooth.
  3. Mix the Wet Ingredients – Add eggs, vanilla extract, unsweetened applesauce, Greek yogurt, and melted coconut oil to the mashed bananas. Stir until well combined.
  4. Combine the Dry Ingredients – In a separate bowl, whisk together whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  5. Combine Wet and Dry Ingredients – Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing.
  6. Fold in the Strawberries – Gently fold in the chopped fresh strawberries.
  7. Fill the Muffin Tin – Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  8. Bake – Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool & Serve – Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
