  • 2 tbsp flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • Green onions or chives, chopped (for garnish)
  • Cheese, shredded (optional, for garnish)

Instructions

  1. Cook the Bacon – In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove and set aside, leaving the rendered fat in the pot.
  2. Sauté Aromatics – Add diced onions and minced garlic to the bacon fat. Sauté until onions are translucent and fragrant.
  3. Add Potatoes and Broth – Stir in diced potatoes and pour in broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Make the Roux – In a small pan, melt butter and whisk in flour. Cook for a couple of minutes until golden brown.
  5. Thicken the Soup – Slowly whisk the roux into the soup, stirring continuously until the broth thickens.
  6. Incorporate Cream – Pour in heavy cream or milk and stir until combined. Simmer for a few more minutes.
  7. Season the Soup – Add salt, black pepper, and thyme. Stir well.
  8. Serve and Garnish – Ladle into bowls and top with crispy bacon, chopped green onions or chives, and cheese if desired.
