  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Description

This One-Pan Chicken and Sweet Potato Skillet is a quick, nutritious, and flavorful meal perfect for busy weeknights. Made with tender chicken, caramelized sweet potatoes, and aromatic spices, it’s a hearty dish that’s easy to prepare and clean up.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 medium sweet potatoes, peeled and diced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, sliced
  • 1 bell pepper, chopped
  • 1/2 cup chicken broth
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • Fresh parsley or cilantro for garnish

Instructions

  1. Prepare the Ingredients – Cut the chicken into bite-sized pieces and season with salt, black pepper, paprika, and cumin. Peel and dice the sweet potatoes, slice the onion, and chop the bell pepper.
  2. Sauté the Chicken – Heat 1 tbsp olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown on all sides. Remove from the skillet and set aside.
  3. Cook the Vegetables – In the same skillet, add the remaining olive oil if needed. Sauté the onion and garlic until fragrant. Then, add the bell pepper and sweet potatoes.
  4. Add the Liquid – Pour in the chicken broth, stirring to combine. Cover the skillet and let it simmer until the sweet potatoes are tender.
  5. Combine Everything – Return the cooked chicken to the skillet and stir well. Let it cook for a few more minutes so the flavors meld together.
  6. Finish and Serve – Garnish with fresh parsley or cilantro, then serve warm.

Notes

  • Protein Swap – Try using turkey or shrimp instead of chicken for a different twist.
  • Vegetable Additions – Add spinach, kale, or zucchini for extra nutrients.
  • Spice it Up – Increase the red pepper flakes or add a dash of cayenne for more heat.
  • Creamy Version – Stir in coconut milk for a rich, creamy texture.
  • Cheesy Twist – Sprinkle some shredded cheese on top for a comforting touch.
