  • 1 tsp ginger, grated
  • 1 red bell pepper, chopped
  • 1 small onion, chopped
  • 2 green onions, sliced (for garnish)
  • 1 tbsp sesame seeds (optional)
  • 2 tbsp olive oil or sesame oil
  • Salt and pepper, to taste

Instructions

  1. Sear the Chicken: Heat oil in a large pot or deep skillet over medium-high heat. Season the chicken with salt and pepper, then sear for 3-4 minutes per side until golden brown. Remove and set aside.
  2. Sauté Aromatics: In the same pot, add chopped onion, red bell pepper, garlic, and ginger. Sauté for 2-3 minutes until fragrant and slightly softened.
  3. Deglaze and Build Flavor: Pour in soy sauce, brown sugar, and chicken broth, scraping up any browned bits from the bottom of the pot.
  4. Add Pineapple and Chicken: Stir in pineapple chunks, then return the seared chicken to the pot.
  5. Cook the Rice: Pour in coconut milk and add the rice. Stir everything together, making sure the rice is submerged in the liquid.
  6. Simmer and Cook: Cover and reduce heat to low. Let everything cook for about 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.
  7. Finish and Serve: Remove from heat and let it sit covered for 5 minutes. Garnish with sliced green onions and sesame seeds before serving.
