Pepper steak with bell peppers and onion is a quick and flavorful stir-fry dish featuring tender beef strips, crisp vegetables, and a savory sauce. Perfect for weeknight dinners, this easy recipe is packed with umami-rich flavors and pairs well with rice or noodles.

Ingredients

Scale
  • 1 lb beef sirloin or flank steak, thinly sliced
  • 2 bell peppers (red, green, or yellow), sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 1/4 cup beef broth or water
  • 1 tsp brown sugar
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 2 green onions, chopped (for garnish)
  • Cooked rice for serving (optional)

Instructions

  1. Prepare the Beef: In a bowl, toss thinly sliced beef with soy sauce, cornstarch, and black pepper. Let marinate for at least 15 minutes.
  2. Prepare the Sauce: In a small bowl, mix soy sauce, oyster sauce, beef broth, brown sugar, and red pepper flakes (if using). Set aside.
  3. Cook the Beef: Heat vegetable oil in a large skillet or wok over medium-high heat. Add beef in a single layer and sear for 1-2 minutes per side until browned. Remove and set aside.
  4. Sauté the Vegetables: In the same pan, add more oil if needed. Stir in bell peppers and onion, cooking for 3-4 minutes until slightly softened. Add garlic and ginger, cooking for 30 seconds until fragrant.
  5. Combine Everything: Return beef to the pan and pour in the prepared sauce. Stir well and allow the sauce to thicken for about 2 minutes.
  6. Finish and Serve: Drizzle with sesame oil, stir, and garnish with green onions. Serve hot over rice or your preferred base

Notes

  1. Spicy Version: Increase red pepper flakes or add sliced chili peppers.
  2. Low-Sodium Option: Use low-sodium soy sauce.
  3. Vegetarian Alternative: Substitute beef with firm tofu or mushrooms.
  4. Gluten-Free Option: Use tamari instead of soy sauce and ensure all sauces are gluten-free.
  5. Extra Vegetables: Add snap peas, carrots, or baby corn.
