Instructions

  • Prepare Ingredients: Cut chicken into bite-sized pieces, season with salt and pepper. Chop onion, bell peppers, and garlic. Drain pineapple chunks, reserving juice.
  • Sear the Chicken: Heat oil in a skillet over medium-high heat. Cook chicken until golden brown (5-6 minutes). Remove and set aside.
  • Sauté Vegetables: In the same pan, sauté onion and bell peppers until softened. Add garlic and ginger, cooking for 1 minute until fragrant.
  • Make the Sauce: Combine pineapple juice, soy sauce, honey, and a splash of chicken broth in a bowl. Adjust seasoning as needed.
  • Combine Ingredients: Add chicken back to the pan with pineapple chunks and sauce. Stir to coat.
  • Add Rice and Broth: Stir uncooked rice into the pan, ensuring even distribution. Pour in chicken broth to submerge rice.
  • Cook the Dish: Bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid absorbed.
