Ingredients
For the Coffee Mixture:
- 1 ½ cups strong brewed espresso or coffee, cooled
- 2 tbsp coffee liqueur or Amaretto (optional)
For the Pistachio Mascarpone Filling:
- 1 cup heavy cream
- ½ cup granulated sugar
- 3 egg yolks
- 8 oz mascarpone cheese
- 2 tbsp pistachio paste
- 1 tsp vanilla extract
For Assembling:
- 24 ladyfinger biscuits
- ¼ cup chopped pistachios (for topping)
- 2 tbsp cocoa powder (for dusting)
Instructions
1. Prepare the Coffee Mixture
Brew a strong espresso or coffee and let it cool. Mix in coffee liqueur or Amaretto for added depth of flavor (optional).
2. Whip the Cream
In a large bowl, whip the heavy cream until stiff peaks form. Set aside.
3. Make the Pistachio Mascarpone Mixture
In another bowl, whisk the egg yolks and sugar until pale and creamy. Add the mascarpone cheese, vanilla extract, and pistachio paste, mixing until smooth.
4. Fold in the Whipped Cream
Gently fold the whipped cream into the mascarpone mixture to create a light, airy texture.
5. Assemble the Tiramisu
- Quickly dip each ladyfinger into the cooled coffee mixture and arrange in a single layer in a serving dish.
- Spread half of the pistachio-mascarpone filling over the soaked ladyfingers.
- Repeat the layers with another layer of dipped ladyfingers and the remaining mascarpone mixture.
6. Chill
Cover and refrigerate for at least 4 hours (preferably overnight) to allow flavors to meld.
7. Garnish & Serve
Before serving, dust with cocoa powder and sprinkle chopped pistachios on top. Serve chilled.
