- 2 tbsp cocoa powder

Instructions
- Prepare the Pistachio Cream: Whisk egg yolks and sugar until pale and fluffy. Add mascarpone cheese, then mix in pistachio paste and vanilla extract until smooth.
- Whip the Cream: Beat heavy cream until stiff peaks form, then gently fold into the mascarpone mixture.
- Prepare the Coffee Mixture: Brew espresso or strong coffee and let it cool.
- Assemble the Layers: Quickly dip each ladyfinger in coffee and arrange a layer in a serving dish.
- Add the Cream Layer: Spread half of the pistachio mascarpone mixture evenly over the ladyfingers.
- Repeat the Layers: Add another layer of soaked ladyfingers and the remaining mascarpone mixture.
- Chill the Tiramisu: Cover and refrigerate for at least 6 hours, preferably overnight.
- Final Touches: Before serving, dust with cocoa powder and sprinkle chopped pistachios.
