These soft and fluffy Quark Bunnies are a perfect Easter treat! Lightly sweet, easy to make, and fun to decorate, they’re ideal for breakfast, snacks, or gifting.

- 1 cup quark
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/3 cup sugar
- 1/4 cup melted butter
- 2 eggs
- 1/4 cup milk
- 1 tsp vanilla extract
- 1 tsp lemon zest (optional)
- Raisins (for decoration)
- Almonds (for decoration)
Instructions
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine quark, sugar, melted butter, eggs, and vanilla extract. Mix until smooth.
- Gradually sift in flour and baking powder, stirring continuously to form a soft dough. Add lemon zest if desired.
- Knead the dough gently on a floured surface until smooth and elastic.
- Divide the dough into portions and shape each into bunny figures. Use small pieces for ears and tails.
- Decorate with raisins for eyes and almonds for tails.
- Brush with milk or egg wash for a golden-brown finish.
- Bake for 15-20 minutes or until golden brown.
- Let cool on a wire rack before serving.

- Chocolate chip bunnies: Add mini chocolate chips for extra sweetness.
- Spiced bunnies: Mix in a pinch of cinnamon or nutmeg.
