Instructions

  1. Prepare the Potatoes: Preheat oven to 400°F (200°C). Toss halved potatoes with 1 tbsp olive oil, salt, and pepper. Roast on a baking sheet for 20-25 minutes until golden and crispy.
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Add 1 tbsp olive oil and butter. Season chicken with salt, pepper, and Italian seasoning. Sear for 4-5 minutes per side until golden brown and cooked through. Remove from pan and set aside.
  3. Make the Dijon Cream Sauce: In the same skillet, sauté minced garlic for 30 seconds. Add chicken broth and scrape up browned bits. Stir in Dijon mustard and heavy cream, simmering for 2-3 minutes until slightly thickened.
  4. Incorporate Parmesan Cheese: Reduce heat to low, stir in Parmesan cheese until melted and combined.
  5. Combine Everything: Return chicken to the skillet, spooning sauce over it. Add roasted potatoes, tossing gently to coat.
  6. Final Touches: Garnish with chopped parsley and serve immediately.
