  • 1/2 cup all-purpose flour

  • 2 large eggs, beaten

  • 1 cup breadcrumbs

  • 1/2 cup grated Parmesan cheese

  • 2 tbsp olive oil

  • 1 1/2 cups marinara sauce

  • 1 cup shredded mozzarella cheese

  • 1 tsp Italian seasoning

  • Fresh basil, for garnish


Instructions

  1. Prepare the Chicken: Slice chicken breasts in half lengthwise and pound them to an even thickness. Season both sides with salt and pepper.

  2. Bread the Chicken: Prepare three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese. Dredge each chicken piece in the flour, dip in the egg, and coat with the breadcrumb mixture.

  3. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Cook the breaded chicken for 3-4 minutes per side until golden brown and crispy. Transfer to a plate lined with paper towels.

  4. Assemble the Dish: Preheat the oven to 375°F (190°C). Spread a thin layer of marinara sauce in a baking dish, place the chicken on top, and spoon additional sauce over each piece. Sprinkle mozzarella cheese evenly over the chicken and top with Italian seasoning.
