Description

Ingredients

  • 2 bell peppers, chopped
  • 1 zucchini, chopped
  • 4 tomatoes, chopped
  • 1 onion, chopped
  • 4 cloves garlic, whole
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)
  • 1/2 cup heavy cream or coconut milk (optional, for creaminess)

Instructions

  1. Preheat & Prepare: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Chop & Arrange: Chop carrots, bell peppers, zucchini, tomatoes, and onion into even pieces. Arrange them on the baking sheet along with whole garlic cloves.
  3. Season & Roast: Drizzle with olive oil, season with salt, black pepper, thyme, oregano, paprika, and red pepper flakes (if using). Toss to coat evenly.
  4. Roasting Process: Roast vegetables for 25-30 minutes, stirring halfway through, until tender and slightly caramelized.
  5. Blend: Transfer roasted vegetables to a blender with a portion of vegetable broth. Blend until smooth (or use an immersion blender in a pot).
  6. Simmer: Pour blended mixture into a large pot, add remaining vegetable broth, and bring to a gentle simmer over medium heat.
  7. Adjust & Enhance: Taste and adjust seasoning as needed. Stir in heavy cream or coconut milk for a creamier texture.
  8. Serve & Garnish: Ladle soup into bowls, garnish with fresh parsley, and drizzle with olive oil or a dollop of yogurt if desired.
