Description

  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1.5 cups pineapple chunks
  • 1 red onion, sliced
  • 2 bell peppers (red, yellow, or orange), sliced
  • 8 corn or flour tortillas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • 1 avocado, sliced (optional)
  • 1/4 cup crumbled cotija cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with oil.
  2. In a bowl, mix the chopped chipotle peppers, adobo sauce, olive oil, minced garlic, cumin, paprika, salt, and black pepper to create the marinade.
  3. Coat the chicken with the marinade, ensuring even coverage. Let it marinate for at least 15 minutes or up to a few hours for deeper flavor.
  4. Spread the marinated chicken, pineapple chunks, sliced red onion, and bell peppers evenly on the prepared sheet pan.
  5. Roast for 20-25 minutes, flipping halfway through, until the chicken is cooked through and slightly caramelized.
  6. Warm the tortillas on a dry skillet or in the oven for a few minutes.
  7. Slice the cooked chicken into thin strips.
  8. Assemble the tacos by filling each tortilla with sliced chicken, roasted pineapple, and veggies.
