- 2 tbsp parsley (for garnish)
Instructions
- Prepare the Chicken: Season the chicken breasts with salt, black pepper, garlic powder, and onion powder on both sides.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.
- Sauté the Mushrooms: In the same skillet, melt butter and add sliced mushrooms. Cook for 5-7 minutes until softened and slightly caramelized.
- Add Garlic and Deglaze: Stir in minced garlic and cook for 30 seconds until fragrant. Pour in the chicken broth to deglaze the pan, scraping up any browned bits.
- Prepare the Sauce: Lower the heat and stir in the heavy cream. Let it simmer for 2-3 minutes before adding grated Asiago cheese. Stir until the cheese is fully melted and incorporated into the sauce.
- Return Chicken to Skillet: Place the seared chicken back into the skillet, spooning the sauce over the top. Cover and let it simmer for 10-15 minutes until the chicken is cooked through.
- Garnish and Serve: Sprinkle with fresh thyme, red pepper flakes (if using), and parsley. Serve hot over pasta, rice, or mashed potatoes.
