For the Smash Burgers:

- 4 brioche or potato buns
- 4 slices cheddar or American cheese
- 4 lettuce leaves
- 4 tomato slices
- 8 pickle slices
- 2 tbsp butter (for toasting buns)
For the Baconnaise Sauce:
- 1/2 cup mayonnaise
- 3 slices crispy bacon, finely chopped
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1 tsp lemon juice
- 1 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
Step 1: Prepare the Baconnaise Sauce
- In a small bowl, mix mayonnaise, crispy bacon, smoked paprika, garlic powder, lemon juice, Dijon mustard, salt, and black pepper.
- Stir well and refrigerate to let flavors meld.
Step 2: Form and Season the Patties
- Divide ground beef into 4 equal portions (about 3-4 ounces each) and gently roll into loose balls.
- Season with salt, black pepper, garlic powder, and onion powder.
Step 3: Toast the Buns
- Heat a skillet or griddle over medium heat.
- Spread butter on the cut sides of the buns and toast until golden brown. Set aside.
Step 4: Cook the Smash Burgers
- Heat a heavy-bottomed skillet or griddle over high heat until very hot.
- Place a meatball onto the pan and immediately smash it down with a spatula until about 1/4 inch thick.
- Cook for 1.5 to 2 minutes until edges are crispy.
- Flip, add cheese, and cook for another minute until melted.
- Repeat for remaining patties.
Step 5: Assemble the Burgers
- Spread baconnaise sauce on the bottom bun.
- Add the smash burger patty.
- Layer lettuce, tomato, and pickles.
- Top with the toasted bun and serve immediately.
