Description

Ingredients

  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter, melted
  • 2 tbsp fresh herbs (such as parsley, rosemary, or thyme), chopped
  • 1/4 cup Parmesan cheese (optional)

Instructions

  1. Boil the Potatoes: Place red potatoes in a large pot, cover with water, add a pinch of salt, and bring to a boil. Cook until fork-tender (15-20 minutes).
  2. Preheat the Oven: While boiling, preheat oven to 425°F (220°C) and line a baking sheet with parchment paper or grease it lightly.
  3. Drain and Cool: Drain potatoes and let them cool slightly for a few minutes.
  4. Smash the Potatoes: Transfer to the baking sheet. Use a fork, potato masher, or glass bottom to gently flatten each potato while keeping them intact.
  5. Season and Drizzle: Drizzle with olive oil, then sprinkle garlic powder, salt, and black pepper. Optionally, add fresh herbs and Parmesan cheese.
  6. Bake Until Crispy: Bake for 20-25 minutes until edges are golden brown and crispy.
  7. Add Butter and Serve: Brush with melted butter, garnish with fresh herbs, and serve hot.
