- 1/4 cup Parmesan cheese (optional)
Instructions
- Boil the Potatoes: Place red potatoes in a large pot, cover with water, add a pinch of salt, and bring to a boil. Cook until fork-tender (15-20 minutes).
- Preheat the Oven: While boiling, preheat oven to 425°F (220°C) and line a baking sheet with parchment paper or grease it lightly.
- Drain and Cool: Drain potatoes and let them cool slightly for a few minutes.
- Smash the Potatoes: Transfer to the baking sheet. Use a fork, potato masher, or glass bottom to gently flatten each potato while keeping them intact.
- Season and Drizzle: Drizzle with olive oil, then sprinkle garlic powder, salt, and black pepper. Optionally, add fresh herbs and Parmesan cheese.
- Bake Until Crispy: Bake for 20-25 minutes until edges are golden brown and crispy.
- Add Butter and Serve: Brush with melted butter, garnish with fresh herbs, and serve hot.
