Description

  • Beef Marinade:
    • 1 lb flank steak or sirloin, thinly sliced
    • 2 tbsp soy sauce
    • 1 tbsp Shaoxing wine or dry sherry
    • 1 tbsp cornstarch
  • Sauce:
    • 2 tbsp oyster sauce
    • 1 tbsp hoisin sauce
    • 1 tbsp chili paste (or 1 tsp chili flakes)
    • 1 tsp sugar
    • 1 tbsp rice vinegar
    • 1 tsp sesame oil
    • 2 tbsp water
  • Stir-Fry:
    • 2 tbsp vegetable oil (divided)
    • 3 cloves garlic, minced
    • 1-inch ginger, minced
    • 34 red chili peppers or 1 tsp dried red chilies
    • 1/2 cup scallions, chopped
    • 1 bell pepper, sliced
    • 1/2 cup carrots, julienned
    • 1/2 cup baby corn

Instructions

  1. Prepare the Beef: Slice the beef thinly against the grain. In a bowl, combine soy sauce, Shaoxing wine, and cornstarch. Toss the beef in the mixture and marinate for at least 15 minutes.
  2. Make the Sauce: In a small bowl, mix together oyster sauce, hoisin sauce, chili paste, sugar, rice vinegar, sesame oil, and water. Set aside.
  3. Heat the Wok: Heat 1 tbsp vegetable oil in a wok over high heat. Add the marinated beef in batches to avoid overcrowding. Stir-fry for 2-3 minutes until browned. Remove and set aside.
  4. Sauté Aromatics: Add the remaining 1 tbsp oil to the wok. Stir-fry the garlic, ginger, and red chili peppers for about 30 seconds until fragrant.
  5. Cook the Vegetables: Add bell peppers, carrots, baby corn, and scallions. Stir-fry for 2-3 minutes, keeping the vegetables crisp.
  6. Combine Everything: Return the beef to the wok and pour in the prepared sauce. Stir well and let the sauce thicken for a minute.
  7. Serve Hot: Remove from heat and serve immediately with steamed rice or noodles.
