- Beef Marinade:
- 1 lb flank steak or sirloin, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp Shaoxing wine or dry sherry
- 1 tbsp cornstarch
- Sauce:
- 2 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1 tbsp chili paste (or 1 tsp chili flakes)
- 1 tsp sugar
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 2 tbsp water
- Stir-Fry:
- 2 tbsp vegetable oil (divided)
- 3 cloves garlic, minced
- 1-inch ginger, minced
- 3–4 red chili peppers or 1 tsp dried red chilies
- 1/2 cup scallions, chopped
- 1 bell pepper, sliced
- 1/2 cup carrots, julienned
- 1/2 cup baby corn
Instructions
- Prepare the Beef: Slice the beef thinly against the grain. In a bowl, combine soy sauce, Shaoxing wine, and cornstarch. Toss the beef in the mixture and marinate for at least 15 minutes.
- Make the Sauce: In a small bowl, mix together oyster sauce, hoisin sauce, chili paste, sugar, rice vinegar, sesame oil, and water. Set aside.
- Heat the Wok: Heat 1 tbsp vegetable oil in a wok over high heat. Add the marinated beef in batches to avoid overcrowding. Stir-fry for 2-3 minutes until browned. Remove and set aside.
- Sauté Aromatics: Add the remaining 1 tbsp oil to the wok. Stir-fry the garlic, ginger, and red chili peppers for about 30 seconds until fragrant.
- Cook the Vegetables: Add bell peppers, carrots, baby corn, and scallions. Stir-fry for 2-3 minutes, keeping the vegetables crisp.
- Combine Everything: Return the beef to the wok and pour in the prepared sauce. Stir well and let the sauce thicken for a minute.
- Serve Hot: Remove from heat and serve immediately with steamed rice or noodles.
