  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

Quick and easy Mongolian Ground Beef Noodles, packed with savory-sweet flavors, tender beef, and stir-fried vegetables. A perfect 30-minute meal for busy weeknights!

Ingredients

Scale
  • 1 lb ground beef
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/3 cup soy sauce (or tamari for gluten-free option)
  • 2 tbsp brown sugar
  • 2 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 1/4 cup water
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 3 green onions, chopped
  • 1 cup carrots, julienned
  • 1 bell pepper, thinly sliced
  • 8 oz cooked noodles (lo mein, spaghetti, or rice noodles)
  • 1 tbsp sesame seeds (optional, for garnish)

Instructions

  1. Prepare the sauce: In a small bowl, mix soy sauce, brown sugar, hoisin sauce, sesame oil, cornstarch, and water until well combined. Set aside.
  2. Cook the beef: Heat a large skillet or wok over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain any excess grease.
  3. Add aromatics: Stir in minced garlic and grated ginger, cooking for about 1 minute until fragrant.
  4. Incorporate vegetables: Add sliced carrots and bell peppers, stirring occasionally until they start to soften.
  5. Combine with sauce: Pour the prepared sauce over the beef and vegetables, stirring to coat everything evenly. Let it simmer for 2–3 minutes until the sauce thickens.
  6. Toss with noodles: Add cooked noodles to the skillet, tossing well to combine everything. Cook for another 2 minutes to let the flavors meld.
  7. Finish and serve: Sprinkle with chopped green onions, red pepper flakes, and sesame seeds if desired. Serve hot and enjoy!

Notes

  • Protein Swap: Use ground turkey, chicken, or tofu instead of beef.
  • Vegetarian Option: Omit the meat and add mushrooms, zucchini, and snap peas.
  • Spice Level: Adjust red pepper flakes or add sriracha for more heat.
  • Gluten-Free Option: Use tamari and swap out the noodles for rice noodles or zucchini noodles.
