Description

Delicious and fluffy Swedish Blueberry Rolls (Blåbärsbullar) filled with juicy blueberries and a hint of cardamom. Perfect for breakfast, brunch, or dessert!

Ingredients

Scale
  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp active dry yeast
  • 1 cup warm milk
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 1/2 tsp salt
  • 1 tsp ground cardamom

Filling:

  • 1 1/2 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch

Glaze:

  • 1 cup powdered sugar
  • 2 tbsp lemon juice

Instructions

  1. Prepare the Dough: In a bowl, dissolve the yeast in warm milk and let it sit until foamy. Add sugar, melted butter, egg, salt, and cardamom. Gradually mix in the flour and knead until smooth and elastic. Cover and let rise until doubled in size.
  2. Make the Filling: In a separate bowl, mix blueberries with sugar and cornstarch to thicken the filling.
  3. Roll and Fill: Roll out the dough into a large rectangle on a floured surface. Evenly spread the blueberry filling over the dough.
  4. Shape the Rolls: Roll up the dough tightly from one side, then cut into even slices and place them in a greased baking dish.
  5. Second Rise: Cover the rolls and let them rise again until puffy and doubled in size.
  6. Bake: Preheat the oven to 375°F (190°C) and bake for 20-25 minutes until golden brown.
  7. Glaze: Mix powdered sugar with lemon juice and drizzle over warm rolls before serving.

Notes

  • Berry Mix: Swap blueberries for raspberries, blackberries, or a combination.
  • Nutty Addition: Add chopped almonds or walnuts for extra crunch.
  • Spiced Version: Sprinkle cinnamon along with the cardamom for a warmer spice profile.
  • Cream Cheese Glaze: Replace lemon glaze with a rich cream cheese frosting.
