- 1 ripe mango, peeled, pitted, and chopped
- ¼ cup olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp honey or maple syrup
- 1 tbsp fresh lime juice
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- ¼ tsp red pepper flakes or chili powder (adjust to taste)
- Salt and black pepper, to taste
- Water, as needed for consistency
Instructions
- Prepare the Mango: Peel and pit the mango, then cut it into small chunks.
- Blend the Ingredients: In a blender or food processor, combine mango, olive oil, apple cider vinegar, honey (or maple syrup), lime juice, Dijon mustard, minced garlic, and red pepper flakes.
- Adjust Seasoning: Blend until smooth, then taste and adjust with salt and black pepper.
- Thin if Necessary: If the dressing is too thick, add water one tablespoon at a time, blending until desired consistency is reached.
- Serve or Store: Transfer to an airtight jar or bottle and use immediately or store for later.
