  • 1 tbsp olive oil
  • 46 flour or whole wheat tortillas
  • ½ cup shredded cheddar or vegan cheese
  • ¼ cup fresh cilantro, chopped
  • 1 avocado, sliced
  • 1 tbsp lime juice
  • Greek yogurt or sour cream (optional)

Instructions

  • Roast the Sweet Potatoes

    • Preheat oven to 400°F (200°C).
    • Toss diced sweet potatoes with olive oil, salt, and pepper.
    • Spread on a baking sheet and roast for 25-30 minutes, flipping halfway.
  • Prepare the Filling

    • In a skillet over medium heat, sauté onion and bell pepper for 5 minutes.
    • Add garlic, black beans, cumin, chili powder, and paprika. Cook for 3-4 minutes.
  • Combine Everything

    • Mix roasted sweet potatoes into the skillet and stir gently to combine.
  • Assemble the Burritos

    • Warm tortillas for flexibility.
    • Add the sweet potato mixture, cheese, cilantro, avocado, and a squeeze of lime.
    • Optionally, add Greek yogurt or sour cream.

 

  • Wrap and Serve

    • Fold the sides, roll up tightly, and serve as is or toast on a skillet for a crispy exterior.
