Instructions
- Prepare the ingredients: Peel and dice the potatoes, core and chop the pears, and finely dice the onion and garlic.
- Sauté aromatics: In a large pot, heat olive oil or butter over medium heat. Add the diced onion and garlic, cooking until soft and fragrant.
- Cook the potatoes: Add the diced potatoes to the pot, stirring to coat them in the aromatics. Pour in the vegetable or chicken broth, ensuring the potatoes are fully submerged. Bring to a gentle boil and let them cook until tender.
- Add the pears: Once the potatoes are almost fully cooked, stir in the chopped pears and fresh thyme. Simmer for an additional 5-7 minutes until the pears soften.
- Blend the soup: Using an immersion blender, blend the soup until smooth. Alternatively, transfer it in batches to a blender and process until creamy.
- Season and finish: Stir in heavy cream or coconut milk, along with a pinch of nutmeg, salt, and black pepper to taste. Adjust seasonings as needed.
