    • 2 tbsp butter, softened
    • 1 tbsp honey

Instructions

  • Preheat the Oven: Set oven to 375°F (190°C) and grease a mini muffin tin.
  • Prepare Dry Ingredients: In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, and sugar.
  • Combine Wet Ingredients: Melt butter and mix with honey, buttermilk, eggs, and vanilla in a separate bowl. Stir well.
  • Mix the Batter: Gradually add wet ingredients to dry ingredients, stirring until just combined. Do not overmix.
  • Fill the Muffin Tin: Spoon batter into the muffin tin, filling each cavity about two-thirds full.
  • Bake: Place in oven and bake for 10-12 minutes, or until golden brown and a toothpick comes out clean.
  • Prepare Honey Butter: Mix softened butter and honey in a small bowl until smooth.
