Instructions
- In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, taco seasoning, and sour cream until well blended.
- Stir in the drained Rotel tomatoes, ensuring excess liquid is removed to prevent soggy tortillas.
- Mix in the chopped green onions and any optional ingredients such as ground beef, black olives, or cilantro.
- Lay out the flour tortillas and evenly spread the mixture over each, leaving a small border around the edges.
- Roll each tortilla tightly and place seam-side down.
- Wrap the rolled tortillas in plastic wrap and refrigerate for at least 1 hour to firm up.
- Once chilled, slice the tortillas into 1-inch thick roll-ups.
- Arrange on a serving platter and garnish with extra green onions or cilantro if desired.
