Instructions
- Prepare the Sweet Potatoes: Peel and dice the sweet potatoes into small cubes (1/2-inch size) to ensure even cooking.
- Cook the Ground Beef: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes). Remove the beef from the pan and set aside.
- Sauté the Vegetables: In the same skillet, add another tablespoon of olive oil. Add the diced onion, bell pepper, and garlic. Sauté until the vegetables are soft and the onion is translucent (about 3-4 minutes).
- Cook the Sweet Potatoes: Add the diced sweet potatoes to the skillet. Stir to combine with the vegetables. Season with cumin, chili powder, paprika, salt, and black pepper. Cook, stirring occasionally, until the sweet potatoes are tender and browned (about 10-12 minutes).
- Combine the Beef and Sweet Potatoes: Return the cooked ground beef to the skillet and stir to combine. Cook for an additional 2-3 minutes to allow the flavors to meld together.
