- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh, canned, or frozen)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, finely diced
- 1 cup grape tomatoes, halved
- 1 jalapeño, minced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 2 cloves garlic, minced
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp honey (or maple syrup for a vegan option)
- Tortilla chips (for serving)
Instructions
- Prepare the Vegetables – Dice the red bell pepper, green bell pepper, red onion, grape tomatoes, and jalapeño. Finely chop the cilantro.
- Drain and Rinse Beans – Rinse and drain the black-eyed peas, black beans, and corn to remove excess sodium and liquid.
- Make the Dressing – In a small bowl, whisk together lime juice, olive oil, red wine vinegar, minced garlic, ground cumin, salt, black pepper, and honey.
- Combine Ingredients – In a large mixing bowl, combine the beans, corn, diced vegetables, and chopped cilantro.
- Add the Dressing – Pour the dressing over the mixture and toss until evenly coated.
- Chill Before Serving – Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve and Enjoy – Serve chilled with tortilla chips or as a flavorful topping for tacos, grilled meats, or salads.
